Poul grew up on the family farm in Arhus. He went to Hotel School and specialized in Dining Room Service. Poul came to the La Quinta Hotel, La Quinta, California on a student work exchange program. He loved La Quinta, and extended his Visa as long as possible. When Poul found he could not get permanent residence in the United States as a waiter, he went back to school...
Poul went back to Denmark and returned to the Hotel School. This time, he studied cooking because chefs could get permanent status in the U.S. Poul started at the bottom, peeling potatoes and studying the chemical makeup of food. He would spend his vacations in La Quinta. Eventually Poul graduated as a Chef, and got work papers to California. Poul went to work in the kitchen of a Danish Hotel in Laguna Beach.
Poul renewed his friendship with Lisa at this time, and they got married. They decided to set up married life in La Quinta--the desert and hotel they both loved. Poul went back to serving, his favorite profession.
Poul was a good chef, but did not have the love of cooking that great chefs have. To him, it was a means to an end. Poul enjoyed old American cars. At one time he had two 1960's Cadillac convertibles--one in black and one in white. Poul played honky tonk piano. He could rebuild old pianos, and also worked on player pianos. Poul loved to travel--he had seen most of Europe, Mexico, and large junks of the United States.
